THE WINE CELLAR
Documents about the activities and the wine production in our properties date back to about 1270, and are based on letters from the Prince of Piedmont in which our wines were required. These letters were found in the archives of the castle. Our wine production, on about 22 hectares of vineyards, is around 100,000 bottles a year. Our wine remains for two years in the barrels and at least four years in the bottle, since we want an important and structured product. Once, the wine was made entirely at the castle, where the vinification was completed in barrels. Eventually, for convenience, the production was been moved to Pradvaj’s farmstead (the Piedmontese word for ‘tool’), an eighteenth-century farmhouse with a remarkable wine cellar, in which the grain was collected and livestock reared. The cellar was completely renovated in 2004 following a cutting-edge project for those times, not only for the technological aspect: the part dedicated to winemaking, in fact, was covered by a hill in order to cool wines naturally, with an extraordinary aesthetic effect that hides it from the view in an almost perfect way.
